Apparently, the empty multi-configuration selection box has been a bug since about a week ago: https://issues.jenkins-ci.org/browse/JENKINS-9689
The permissions-related XML configuration error stemmed from me selecting "Project Matrix Authorization Strategy" without actually granting any permissions. Despite the fact that such a setup doesn't make too much sense, it still shouldn't fail like it. I've filed that as a bug: https://issues.jenkins-ci.org/browse/JENKINS-9774
I really want to try out jenkins at work when I get time...tdd first though. Hopefully that issue will get fixed soon so you can get further with the demo next time.
